Forgive me for what may seem like an obvious question, but are you looking for strictly vegetarian (or are chicken and/or shrimp ok)?
One that I love that's quic and easy is tortellini soup. I use a package of frozen tortellini (any kind), a two cans of diced tomatoes (not drained), two cans of chicken broth, diced garlic (1 TB). Basil and oregano to taste as you like. Cook it for about 10 minutes. It's yummy!

It does have beef bouillon in it, but I am sure you could substitute something else. (We're not vegetarians, so I can't help there)
It is actually warmer here today than it has been in a few weeks. I was ready for fall soup weather, too!

I am not a strict vegetarian as I eat chicken, but I don't eat red meat or fish.
